(H) - at least one working surface is extra hard, which is particularly suitable for attaining mirror edges. Instructions: 1. Use with water only, do not use with oil. 2. No pre-soaking required. 3. Place the main stone on the anti-slip pad. 4. Spray water. 5. Place the nagura on the stone surface and make circular motions to produce a fine slurry (paste). 6. Grasp the knife by the handle and hold the edge against the stone, point-first, at a 20-degree angle. Stabilize the blade with your other hand. 7. With moderate pressure, slide the blade forward and across the stone, covering the entire length of the blade. Maintain the angle. Do this 10 times. 8. Flip the knife over and give the other side of the blade 10 strokes on the stone. 9. Keep on sharpening by performing equal strokes on each side. To test the sharpness of the blade, try cutting the skin of a ripe tomato or a piece of paper. 10. When finished, rinse and wipe the blade dry to remove any metal particles. 11. Rinse the waterstone with water. 13. Place the nagura on the stone surface and make circular motions to remove any ingrained metal particles and flatten the stone for its next use. 14. Wipe both stones dry, do not store immersed in water.
